Easy Weeknight Strawberry Pie
Do you ever feel that a good weeknight dessert is out of reach after working all day? Well, I’m here to tell ya that you don’t have to wait until the weekend to enjoy a delicious sweet treat. Once you have a taste of this super easy weeknight strawberry pie, you will want to make it often for your family.

I love the idea of making 3-course meals for dinner during the week. I always seem to have the best of intentions. But when I get home after working all day, I just want to get a meal on the table as quickly as I possibly can. Lucky for me (and now you), I can quickly whip up this super easy, and super delish strawberry pie.
Here is what you will need:
- All-purpose flour
- salt
- sugar
- vegetable oil
- corn syrup
- cornstarch
- small box of Strawberry Jello
- 2 pints of sliced strawberries

I usually just get my strawberries from Kroger or Walmart, but in the summer months, there is nothing better than fresh berries from our local farmer’s market. I wash them with an organic fruit wash and rinse them off before slicing.

Before I go on, I must confess that I am not a baker by any stretch of the imagination. So please, no judgment if you can make a killer crust from scratch!
You will want to start with the pie crust first so it can bake in the oven while you are preparing the filling. I like to use a pretty white pie plate to make my strawberry pie. Mix the flour, salt, and sugar in a mixing bowl, and then add in the vegetable oil and milk.

Once all of the pie crust ingredients are mixed together, add the dough to a pie pan.

Press the dough along the edges of the pie pan. If you are a perfectionist, feel free to make the edges a little fancier than mine. Bake the crust at 400 degrees for 15 minutes. Cool when completed.

While the crust is baking, prepare the pie filling. Cook additional sugar, corn syrup, corn starch, and water in a saucepan over medium heat. Stir the mixture constantly until it thickens. Remove from the heat and add in 3 Tbs. of strawberry jello. Set aside and cool.

When the jello mixture has cooled, add in the strawberries. Combine until all strawberries are covered with the filling. Pour filling into the pie crust and cool for 3 to 4 hours.

Easy Weeknight Strawberry Pie
Ingredients
Pie Crust
- 1 1/2 cups flour
- 1/2 tsp salt
- 2 Tbsp sugar
- 1/2 cup vegetable oil
- 2 Tbsp milk
Strawberry Filling
- 1 cup sugar
- 2 Tbsp corn syrup
- 7 Tbsp cornstarch
- 1 cup water
- 3 Tbsp Strawberry jello
- 2 pints sliced strawberries
Instructions
Pie Crust
- Mix the dry ingredients in a mixing bowl with a fork. Add the wet ingredients and stir to combine. Press into the bottom of a pie plate and along the edges. Bake for 15 minutes in a 400 degree oven until crust is slightly brown. Cool completely.
Strawberry Filling
- Cook the sugar, corn syrup, corn starch and water in a saucepan over medium heat. Stir constantly until the mixture is thick. Remove from the heat and stir in 3 Tbsp of the strawberry jello. Cool the filling and add the strawberries. Pour the strawberry filling into the cooled pie crust. Refrigerate for 3 hours.
